From December 24, 2018, to January 1, 2019, Kodawari Ramen offers an exceptional Wagyu Grade A5 Ramen, featuring a scallop shell dashi, garlic leaves, salmon roe, and a yuzukocho seasoning.
This surf-and-turf ramen, homemade and free from flavor enhancers, will be available for lunch and dinner during this period, but limited to 50 bowls per day.
A little background: Wagyu beef – literally “Japanese beef” – is a crossbreed originally raised for its strength in agricultural work. The marbling of the meat – the intramuscular fat within the beef – is one of the key factors behind Wagyu’s buttery flavor. This unique marbling has earned it a stellar reputation among meat enthusiasts in Japan and worldwide.
Based on the degree of marbling, Wagyu beef is graded from A1 to A8: the finer the flavor and taste, the higher the grade. Kodawari Ramen is proud to offer Grade A5 Wagyu beef for this exceptional dish.
